Hitting my fiber + protein goal with this meal prep chopped salad 🥒🫛🍊🥗 For the marinade/dressing: 1/4 cup soy sauce 1/4 cup rice vinegar 1/2 tbsp sesame oil 1 tbsp ground ginger 1 tbsp honey 3 cloves minced garlic For the salad: 3 cups coleslaw mix (purple & red cabbage and carrots) 2 cups chopped broccoli 2 chopped Persian cucumbers 1/3 cup chopped green onion 3 tbsp chopped cilantro 1.5 cups mandarin oranges 1/4 cup slivered almonds 1-2 chicken breast diced 2 tbsp sesame seeds Make the dressing & marinade first Dice chicken into bite size pieces Use about 1/3 of the dressing to marinate the chicken and set aside Next, chop all of your veggies up and add to a bowl Cook your chicken in the marinade and sprinkle with sesame seeds Add to salad mixture and top with the rest of the salad dressing and combine Makes about 4 servings! (Makes 6 slices) First mix the dry ingredients together: 1 cup wheat bran 1/2 cup flour 1/4 cup flaxmeal 1 tsp baking soda 1 tsp baking powder 1 tbsp cinnamon 1/3 cup sugar (optional) Then mix the wet ingredients together: 2-3 mashed, ripe bananas 2 eggs 1/2 cup Greek yogurt Combine both wet + dry ingredients & stir in 1/2 cup chocolate chips (If it’s too thick/dry add in a splash of milk) Bake in a loaf pan at 350 degrees for 1 hour
