Healthy Sweet Potato Pizza 🍕 Ingredients (1 pizza): 225g sweet potato 150g plain flour Salt Black pepper 60g mozzarella 100g tinned tomatoes Pepperoni ——— Method: 1. Place the sweet potatoes in a saucepan with cold water, then place it on the hob and bring to a boil. Boil for 20 minutes until cooked through. 2. Remove the skins from the sweet potatoes, get them into a bowl and mash them. Add the plain flour, salt and black pepper. 3. Bring it together in the bowl to form a dough and knead for a few minutes until smooth. 4. Roll out the flatbreads on a floured surface and cook them in a frying pan over high heat with a little oil until golden brown on both side. 5. Top with tinned tomatoes, grated mozzarella and pepperoni. Place under the grill until the cheese is golden brown and bubbling. Serve up and enjoy. High Protein Creamy Leek, Potato & White Bean Soup 🥔🥣 Ingredients (Serves 3-4): • 1 tbsp olive oil or butter • 2 large leeks, cleaned and sliced • 2 garlic cloves, chopped • 400g potatoes, peeled and diced • 1 tin (400g) cannellini or butter beans, drained and rinsed • 700ml vegetable or chicken stock • 2 tbsp cottage cheese or Greek yogurt (optional, stirred in at the end) • Salt and black pepper to taste • Optional: a few fresh thyme leaves or a pinch of nutmeg Protein boost: ~17–20g per portion (beans + optional yogurt/cottage cheese) 1. Heat the olive oil in a large pan. Add the leeks and garlic, cook gently for 6-8 minutes until softened. 2. Add the potatoes and beans, stir well, then pour in the stock. 3. Simmer for 15-20 minutes until everything is soft. 4. Blend until completely smooth. 5. Stir in cottage cheese or Greek yogurt (if using) and blend again for extra creaminess. 6. Sweet Chilli Halloumi Burger 🍔 Ingredients: 100g halloumi 1/2 red bell pepper 1 burger bun 1 tbsp sweet chilli sauce 1 tbsp mayo Lettuce Spray oil ——— Method: 1. Slice the red pepper into a large flat piece and chop the block of halloumi in half. 2. Place the halloumi slice and pepper in the air fryer basket, season with a little salt and black pepper, then spray with oil. Cook at 200°C for 10 minutes. 3. Toast the burger buns and then build your burger. Bottom bun, mayo, lettuce, red pepper, halloumi, sweet chilli sauce and then top bun. One-Tray Full English Breakfast 🍳🥓🍅🍄‍🟫 Ingredients 8-10 chipolata sausages (or your favourite sausages) 8 rashers streaky bacon 2-4 slices black pudding 250g cherry tomatoes, halved 200g button mushrooms, halved 1 tin (400g) baked beans 4 medium eggs Olive oil Salt & black pepper 4 slices bread, for toast Brown sauce or ketchup, to serve Fresh chives or parsley, to finish (optional) Method 1. Start the sausages and bacon (10 mins): Preheat your oven to 200°C fan. Lay out the chipolata sausages and streaky bacon on a large tray, drizzle with a little olive oil, and roast for 10 minutes until starting to colour. 2. Add black pudding, tomatoes & mushrooms (5 mins): Move the sausages and bacon to one side of the tray. Add the black pudding slices, cherry tomatoes, and button mushrooms to the other side. Toss them in the bacon fat, season with a pinch of salt and pepper, and return to the oven for 5 minutes. 3. Add beans & eggs (set up corner, 2 mins): Make a space in one corner of the tray. Pour in the baked beans, then use a spoon to make 4 little wells in the beans. Crack an egg into each well. (If you want, drizzle the eggs with a little oil or season with extra salt and pepper.) 4. Final roast (5–8 mins): Return the tray to the oven and cook for another 5–8 minutes, until the eggs are set to your liking, everything is sizzling, and the bacon and sausages are golden and crisp. 5. Toast & serve (5 mins): While the tray finishes, toast your bread. Serve everything up straight from the tray, with toast and brown sauce on the side. Hidden Veg Cheeseburger 🍔 Ingredients (per burger): 1 burger bun 130g beef mince 4-5 mushrooms 1/2 small onion 1 slice Red Leicester cheese Salt Black pepper Ketchup Mustard ——— Method: 1. Finely chop the mushrooms and grate the onion. Cook in a pan over medium heat with a little oil, for about 5 minutes (to remove the moisture from them). 2. Let the mushrooms and onion cool a little, then add to a bowl with the beef mince. Season with salt and black pepper, mix until combined and then form into a patty. 3. Heat up some oil in your pan over a high heat, add the burger patty and cook for 4-5 minutes on each side. Don’t touch it whilst it cooks to make sure they form a nice crust. 4. Top with a slice of Red Leicester cheese, or your preferred cheese, then cover the pan with a lid until the cheese melts. 5. Homemade Sausage Rolls 🔥 Ingredients: 1 sheet ready-rolled puff pastry 6 sausages 1 apple 1 tsp dried sage 1 tsp onion powder Salt Black pepper 1 egg Splash of milk ——— Method: 1. Preheat your oven to 180°C. Remove the casing from the sausages, then peel the apple and grate it. Squeeze the grated apple to remove excess moisture. 2. Grab a bowl and mix together the grated apple, sage, onion powder, salt and black pepper. 3. Cut pastry sheet into 2 long strips (lengthways). You’ll get 2 strips about 10-15cm wide. 4. Divide the sausage mix into 2 and lay it out in an even log shape across both pieces of pastry. 5. Fold over the pastry and seal the edge by pressing down with your fingers or a fork. Place on baking tray, a little spaced out. Beat the egg with a splash of milk and then brush this over the top of the sausage rolls. 6. Bake for 20 minutes until golden brown and puffed. Cheesy Quesadilla 🧀 Ingredients: 1 tortilla wrap 1/2 red pepper 1/2 onion Handful of spinach 2 tbsp ricotta cheese 25g mozzarella 1 tbsp pesto Salt Black pepper Method: 1. Finely dice the onion and red pepper. Spread the pesto one half of the wrap. Then top with the diced veg, mozzarella, spinach and ricotta. 2. Season with salt and black pepper, fold the wrap in half, then place into your air fryer basket or oven tray. Spray with a little oil. 3. Cook at 200 degrees celcius for 8 minutes until the mozzarella has melted and the wrap is crispy. Chop into quarters, serve hot, and enjoy. Lovely! #quesadilla #wrap #EasyRecipe #lunchideas

Beef Enchiladas 🌯 Ingredients (serves 2): 4 tortilla wraps 350g beef mince 400g tinned tomatoes 1 tbsp tomato paste 1 onion 1 red bell pepper 2 garlic cloves 200g kidney beans 1 tsp ground cumin 1 tsp smoked paprika 1 tsp ground coriander 1 tsp chilli powder Salt Black pepper 50g cheddar cheese Olive oil. ——— Method: 1. Finely dice the onion and pepper. Finely grate the garlic. Then heat olive oil in a large pan over a medium heat. Add the onion and pepper, cook for 5 minutes. 2. Add the beef mince and break it up using your spoon/spatula. Cook the mince until it’s fully browned, then add the garlic, smoked paprika, cumin, ground coriander, chilli powder, salt and black pepper. Cook for 30 seconds. 3. Add the tomato paste and mix well, cook for 30 seconds. Then add half of the tinned tomatoes and all the kidney beans, simmer for 10 minutes. 4. Get your wraps, and divide the mixture evenly between all 4 of them. Wrap them tightly and place into an oven proof dish. 5. Top the wraps with remaining tinned tomatoes, grated cheddar cheese and season with salt and black pepper. 6. Place under the grill for 5 minutes or until the cheese is golden and bubbling.
