Pov: you're feeling run down so you make you my "get well soon" soup 🥣✨ FULL RECIPE BELOW 👇🏼 My BF was super unwell last week so I made this 3 times!! It's comforting, nutrient-packed and perfect with some chunky slices of buttery bread. Packed with immune boosting ingredients, this quick and easy roasted veg soup is the perfect pick-me-up when you're feeling under the weather! It's high in vitamin C & A, rich in antioxidants and your gut will LOVE it 👏🏼. Make sure you hit the save button to recreate it yourself! You will need 👇🏼 🫑1 red bell pepper 🥕3 large carrots 🍅250g tomatoes 🧅 1 red onion 🧄 1 bulb of garlic 🥄 A big drizzle of olive oil 🥄 1 tsp salt (add to your taste) 🥄 1 tbsp mixed herbs 🥄 1- 2 tsp chilli flakes (add to your taste) + 2 heaped tbsp hummus + 1 tbsp balsamic vinegar (optional but delicious) + 1 veg or chicken stock cube mixed with 600ml of water HOW TO👇🏼 Assemble as demonstrated in the video! Episode 2 of my hidden veggies series, LET'S GO 💚💚💚 INTRODUCING MY GREEN GODDESS PASTA SAUCE... or if you're trying to convince your toddler to eat their greens this is HULKS favourite meal or Elphabas MAGIC green sauce! 🍝 Pasta is my ultimate comfort food and this bowl is super nourishing and perfect for a quick, wholesome weeknight dinner or meal prep!  Tag someone who’d love this bowl of creamy, dreamy, GREEN, goodness! You will need 👇🏼 (serves 4) 🥄 1 tbsp olive oil (to cook the pan ingredients) 🥒 1 courgette, chopped 🫛 150g cup frozen green peas 🧄 3 garlic cloves, minced 🧂 1/4 tsp salt (adjust to taste) 🍃 100g of spinach 🥛 70ml oat cream (or soy cream or oat milk) 🍃 a small handful of fresh basil 🍋 1 tbsp lemon juice 🍯 10g of syrup or honey + Your toppings: I like extra chopped basil, parmasan cheese and some chilli flakes + Protein: I like to use lentil pasta to make this a high protein pasta dish OR you could add in your favourite protein source + the pasta of course!! So I had to end the year with this one 👉🏼 2 MINUTE MICROWAVE BERRY CROISSANT BOWL 🥐!!!!! other microwave recipes you can find on my feed: 🥞 lazy gal pancake bowl 🥣 brownie breakfast bowl 🍓 Berry breakfast crumble 🍞 french toast 🍪 breakfast cookies 🥄 weetabix porridge FOR THIS WEEKS RECIPE… you will need 👇🏼 🥐 2 croissants (chopped) 🍓 handful of berries 🥛 60ml milk of choice (I used oat) 🥄 1 egg or an egg alternative (see below) 🍯 15g maple syrup or honey 🥄 1 tsp cinnamon How to 👇🏼 - Assemble as demonstrated in the video - Ensure croissants are fully coated in the mix Substitutes 👇🏼 - no microwave? OVEN @ 175 fan for ~20 mins - want to air fry? 160 for 10 - 12 mins - Egg alternatives = 1 tbsp of chia seeds or ground flax with 2 tbsp of water, leave to set for 10 mins - For egg alternatives: use 50ml of milk instead 🥐This recipe is my take on a breakfast croissant casserole or croissant french toast! Your weekly recipe reel has arrived and you NEED to save this one 🫡 👏🏼✨ When I posted my lazy gal pancake bowl, it went viral and so I HAD to share this recipe with you too. THIS WEEK WE HAVE: a quick and easy autumnal apple pancake loaf (you could also make this as a tray bake - cooking times will vary)✔️ You will need 👇🏼 🍎 3 apples (thiny sliced) 🥄 300g of your favourite pancake mix  🥛  400 ml of your favourite milk (typically, pancake batter has a 1:1.25 to 1:1.5 powder-to-liquid ratio, but check the package to see if it specifies a ratio) HOW TO👇🏼 Assemble as demonstrated in the video 🫶🏼! EXTRA INFO👇🏼 🔎Grease the tin with a little butter before adding in the mix OR line the tin with greaseproof paper 🔎Baking time = 35 - 45 minutes ( or until a toothpick inserted into the center comes out mostly clean) 🔎If you notice the top browning too quickly, cover it loosely with foil during the last 10–15 minutes. 🔎Let the loaf cool in the pan for 10–15 minutes before removing and slicing. 🔎I like to serve mine with yoghurt for a protein boost, peanut butter to keep me satisifed and a drizzle of syrup because I love some sweetness :') This is your ultimate easy lazy girl autumnal recipe.
