Slowcooker Mexican Pulled Beef Tacos 🌮 Perfect for a lazy midweek meal or hosting. Simply chuck all the ingredients into the slowcooker, come back and serve with some homemade avocado crema. So good. Makes 10-12 tacos Ingredients: - 1 kg braising steak or brisket - 30g taco seasoning - 120g brown sugar - 2 tbsp chipotle paste - 3 tbsp tomato purée - 1 tsp garlic puree - 80ml apple cider vinegar - 300ml beef stock - Salt and pepper Serve with: Soft taco shells Avocado crema Fresh coriander Limes Method: 1. Add all the ingredients above to the slowcooker and cook on high for 7-8 hours 2. Healthy Peanut Butter & Chocolate Magnums 🍌🥜 Ever meal prepped an ice lolly snack? Stop what you’re doing and make these! If you don’t like banana swap for other fruit! Serves 4 Ingredients: - 2 bananas - 150g Greek yogurt - 1-2 tbsp peanut butter - 50ml milk - 150g dark chocolate - 1 tsp coconut oil (Optional) Method: 1. In a blender, mix your banana, peanut butter, yoghurt and milk (this should make a nice smooth liquid) 2. Pour the mixture into your lolly moulds (I just got these on Amazon link in my storefront) pop them into the freezer for 3-4 hours 3. After 3-4 hours, melt your dark chocolate with a teaspoon of coconut oil and pour into a mug/cup of choice. Grab your lolly mould from the freezer and dip the lollies into the chocolate until they are fully covered 4. Set the lollies on a tray with greaseproof paper so they don’t stick and freeze for another 30 mins. Hopefully you can wait the 30 minutes! Air Fryer Tandoori Chicken Sliders 370 calories per slider Serves 4 I’ve always been a fan of tandoori chicken, and these sliders take that love to a whole new level with garlic butter, cheese and a coriander salsa. My new book Healthy Fakeaways is HALF PRICE so go preorder it💙 Ingredients: Coat 3-4 chicken breasts in: 2-3 tbsp Greek yoghurt 2 tsp tandoori curry powder 1/2 tsp cumin 1tsp coriander 1/2 tsp garam masala 1 tsp garlic puree Salt and pepper ½ lemon, squeezed A few drops red food colouring (optional) Serve with: 4 brioche baps 4 slices of mozzarella 8 cherry tomatoes diced Handful of fresh coriander Garlic butter (optional) Method: 1. Cut your chicken breasts into bite size chunks and add to a bowl with all the ingredients above and mix until chicken is coated. 2. Air fry for 12-14 minutes at 180 or until cooked through. 3. Grab your brioche baps and add to an oven proof dish, add your mozzarella slices, your chicken then top with a nice tomato and coriander mix. Add the top of the buns and brush with some garlic butter. 4. Air fry at 180 for 3-4 minutes (or until the cheese is nice and melted). Air Fryer Crispy Potato Salad 🥔 Any salad is made better with potato... and in my opinion this is the salad of the Summer. It’s crispy, creamy and the lemon juice gives it that Summer feel. Ingredients - 750g baby potatoes - 200g bacon lardons (can be pre-cooked bacon) - 2 tbsp olive oil - 5 tbsp Greek yoghurt - 2 tbsp light mayo - 1 tsp Dijon mustard - Juice of ½ lemon - Salt and pepper - Garlic (optional) - Chives - Parsley Method: 1. Boil your baby potatoes for 30 minutes (or until tender) 2. Line your air fryer with some parchment paper and set your boiled baby potatoes on top. Take a pint glass and crush the potatoes so they are flat and sprinkle with salt, pepper and plenty of olive oil. 3. Air fry the potatoes for 25 minutes at 200 until nice and crispy 4. While the potatoes are cooking, prepare your dressing by mixing Greek yoghurt, light mayo, lemon juice, Dijon mustard, garlic (optional), cooked bacon, parsley, chives and some salt and pepper 5. Once the potatoes are cooked, let them cool for 5 minutes and chop them into quarter pieces and pop them into the dressing. Give it a good stir and serve with some chive on top. Slowcooker Ham 🥪 Why spend fortune on supermarket ham when you can make your own? Its more flavourful and makes so much more ham (bang for your buck!!) Perfect for lunches or a an addition to a djnner. Ingredients: 1.5kg unsmoked gammon joint 1L chicken stock 1 onion, sliced 2 celery sticks, chopped 2 carrots, chopped (If you’ve time the night before put your ham in cold water to remove the salt) 1. Simply add your ham or gammon joint to the slow cooker with all the ingredients above and cook on high for 8 hours 2. Airfryer Hunters Chicken 🍗🥓 This no fuss, sticky bacon and bbq coated chicken & potatoes is the one you need, all in one tray. Prep to plate in 25 minutes, perfect for busy workdays. Ingredients 2 chicken breasts Streaky bacon 🥓 700g baby potatoes halved Frylight 4 tbsp bbq sauce 2 handfuls of cheddar 1 tbsp paprika Salt and pepper 1-2 tbsp Worcestershire sauce Baking paper optional, just means less mess acts like a bit of a liner. Airfryer Greek Chicken Bowl 🇬🇷🥗 590 cals a bowl Honestly hooked on meal prep bowls. With 38g protein, it would make the perfect meal prep or dinner with lunch leftovers. Don’t forget to checkout both of my airfryer cookbooks, link in profile.   Marinate your chicken in:   - 5-6 chicken thighs   - 2 tbsp Greek yogurt   - 1 tsp paprika  - 1 tsp thyme  - 1 tsp oregano  - 1 tsp rosemary  - 1 tsp parsley  - 2 crushed garlic cloves  - Juice of ½ lemon  - Salt and pepper  - Olive Oil    Greek salad:  - 1/2 cucumber  - 100g cherry tomatoes  - 75g Feta cheese  - 50g Black olives  - Juice 1/2 lemon  - Fresh mint  - Fresh parsley  - Olive oil  - Salt and pepper    To serve:  Garlic cubed potatoes  Tzatziki (yogurt, fresh mint, squeeze of lemon juice, grated cucumber, salt and pepper)  Hummus (optional)  Toasted pitta bread (optional)     Method:   1. Pop your chicken thighs in a large bowl and add your yogurt, lemon juice and the spices above. Mix through, and let the chicken marinate for at least 4-5 hours, or overnight   2. Once your chicken is marinated, pop your garlic cubed potatoes in the air fryer for 10 minutes at 200, after ten minutes pop your chicken thighs into the air fryer and cook both of them for another 14 minutes at 200  3. While your chicken and potatoes are cooking, prepare your salad by mixing together your tomatoes, cucumber, mint, feta, olives parsley, olive oil and salt and pepper.   4. You can also prepare a super quick tzatziki sauce by mixing together some Greek yoghurt with lemon juice, grated cucumber, fresh mint, salt and pepper.  5. Once the chicken and potatoes are cooked, serve in a bowl alongside the greek salad and tzatziki sauce. Super Easy Smoothie Bowls 🍓🍌 AD All I'm seeing over social media lately is people using the @Ninja UK Creami and to be honest, I get the hype. I'm a bit addicted to making these breakfast smoothie bowls using up some leftover fruit I had in the fridge. This was so easy to make and it's such a lovely breakfast or brunch. Feel free to customise using whatever fruit you like, or even use acai! Ingredients: Handful of strawberries Handful of raspberries Handful of blueberries 2 tbsp Greek yogurt (0% fat) 100ml semi-skimmed milk 1 tbsp honey (feel free to add more if you like) Serve with: Airfryer granola (recipe on my website) 1 tsp chia seeds 1 strawberry, sliced 1 banana, sliced 1 tbsp peanut butter 1 cube dark chocolate, grated Method: Add all of the ingredients for your smoothie bowl into the Ninja Creami pot, making sure not to pass the max fill line. Mash everything together using a fork or masher. Add the pot to the freezer making sure you aren't freezing at an angle and freeze for 24 hours. Once ready, add the pot to the Ninja Creami machine, and select your mode. I used the 'full' and 'frozen yoghurt' setting. After the 4 minutes, I like to re-spin for extra creaminess. Serve the smoothie bowl with some fresh fruit, some air fryer granola, chia seeds, some dark chocolate shavings and a tbsp of peanut butter. French Dip Smash Burgers 🧅🍔 This french onion dip pairs so well with the smash burger and loads of melty cheese. Makes 2 double cheeseburgers 590 calories per burger For the smash burgers: - 500g lean beef mince - 1 tsp garlic granules - 1 tsp onion granules - Salt and pepper - 2 slices of cheese - 2 brioche buns - Low fat mayo (Optional) For the French onion dip: 75g butter 1 white onion sliced 1 tsp garlic puree 1 tsp dried thyme 1 tbsp Worcestershire sauce 170ml beef stock Gravy granules, to thicken Method: 1. Heat a little butter in a pan over medium-high heat. 2. Add the chopped onion and cook for about 10 minutes until browned. 3. Stir in the garlic purée, dried thyme, Worcestershire sauce, and beef stock. Mix well and simmer until the sauce thickens. If it's still too runny, stir in some gravy granules to thicken. 4. Meanwhile, make the burger patties. In a bowl, combine the beef mince with garlic granules, onion granules, salt, and pepper. Mix well, then form into four balls. 5. Add one mince ball to the hot pan. Place a sheet of greaseproof paper on top and firmly press down to smash it into a patty. 6. Cook for 3–4 minutes, flip, add a slice of cheese, and cook for another 3–4 minutes until the cheese melts. Repeat for the remaining patties. 7. Airfryer Chicken Doner Kebab 🥙 Who doesn’t love a kebab? Here is a simple way to make one without using mince. Less than 5 mins hands on time it’s genuinely beyond simple, perfect for midweek meals. Ingredients: - 500g of boneless & skinless chicken thigh - 1 tsp cumin, curry powder, turmeric, paprika, garam masala & garlic powder (optional) - Salt and pepper - 1 tbsp oil, I use rapeseed (higher smoke point) - Serve with pittas, garlic mayo, kebab sauce, lettuce, tomato Method: 1. Simple Chocolate Cornflake Bites 🍫 JUST 4 ingredients if you use chocolate, but you can skip that and have these without chocolate. They’re a dupe of the M&S cornflake bites that I eat by the bucket Ingredients: - 120g cornflakes - 120g salted butter, diced - 100g soft brown sugar For dipping: - 200g of milk or dark chocolate - Optional, 1 tbsp of coconut oil & Flaky sea salt Method: 1. Add your diced butter and brown sugar to a saucepan and cook on medium heat until it starts to bubble.
 2. To a large bowl, add your cornflakes and the sugar/butter mixture then add to a lined baking tray.
 3. Cook for 10-12 minutes at 180 then leave to cool

Irish Egg & Onion Sandwiches 🥚🧅 This is my favourite sandwich and always a go to loaded with protein too. Ingredients 2 slices of bread (I used Farmhouse) 3 boiled eggs 2 tbsp light mayo 1 tsp Dijon mustard Handful of chopped chive Handful of chopped spring onion Salt and pepper Method: 1. Boil your eggs for 5 minutes or (however you like them... you can boil them in water, in the microwave, air fryer). 2. Peel your eggs and pop them into a bowl and start mashing them with a fork. Add 2-3 tbsp of light mayo, with dijon mustard, chopped chives, spring onion, salt and pepper 3. Once mixed add the mixture to your sandwich along with some shredded lettuce. 4. Air Fryer S&P Chicken Spice Bag    If you’ve ever been to Ireland, you’ll know how much we love a salt and pepper chicken spice bag. You can make your own chicken strips but frozen works just as well! Don’t forget to preorder my fakeaway book Healthy Fakeaways   Ingredients:    - 300g chicken, cut into strips  - 3 tbsp cornflour  - 1 x egg, beaten  - 1 x red pepper  - 1 x green pepper  - 1 x onion  - 500g Frozen chips  - Curry sauce (I use Mayflower)     Spice Bag Mix:  - 1 tbsp 5 spice  - 1 tsp mild chilli powder  - 1 tsp garlic powder  - 1/2 tsp chilli flakes  - 1/2 tsp cinnamon  1/2 tsp ginger  1 tbsp sweetener  salt and pepper    Method:  1. If using fresh chicken, dip the chicken breast strips into beaten egg, then coat in cornflour. Air fry at 200°C for 12 minutes, or until cooked through. If using frozen chicken strips, cook according to the packet instructions.  2. For the chips, air fry at 200°C for 15–20 minutes, following the packet instructions. (If you have a dual-basket air fryer, cook the chicken and chips at the same time.)  3. While the chicken and chips are cooking, slice your vegetables and mix your spices together in a small bowl.  4. Heat a little oil in a large pan over medium heat. Add the peppers and onions along with half of the spice mix. Stir-fry for 3–4 minutes until just softened.  5. Add the cooked chicken and chips to the pan, sprinkle in the remaining spice mix, and toss everything together until well coated.  6. A go to for me and a game changer when it comes to flavour, so easy made too 🔥 Serves 4 424 calories a bowl Ingredients: 3 chicken breasts, cut into strips 1 tin of coconut milk 1 red chilli (Seeds too) 1 large mango peeled & chopped 1 tbsp mango chutney 1 onion Salt & Pepper 4 chopped garlic cloves Fresh ginger Handful of fresh coriander 1-2 tbsp curry powder 2 tbsp soy sauce Juice of a lime (I throw a slice in too) 1 yellow pepper 1 tbsp cornflour Method: Add everything to a slowcooker on high for 3 hours or low for 7 hours. Airfryer Chicken Caesar Burger 🥓  Serves 2 The summer burger you need, with a twist. My new book Healthy Fakeaways is available to preorder and it’s half price 📕 Coat the chicken breasts in - 1 tsp paprika - 1 tsp oregano - 1 egg - 100g crushed cornflakes    Ingredients * Romaine/Baby Leaf Lettuce   * 2 brioche buns   * 50g Parmesan, grated   * Pre-cooked crispy bacon  
 * 2-3 tbsp store bought Caesar salad dressing or make your own using:   * 2 tbsp garlic mayo   * Juice of half a lemon   * 2 tbsp parmesan  * 1 tsp Dijon mustard   * 1 tsp Worcestershire sauce    * Parmesan * Salt and pepper 

 Method:    1. Flatten your chicken breast using a meat tenderiser (or feel free to use a rolling pin).    2. Coat the chicken breast in 1 tsp of paprika and 1 tsp of oregano.   3. Dip each chicken breast into egg on both sides, then into the crushed corn flakes – making sure to coat equally.  4. Pop the chicken breasts in the air fryer and cook for 15 minutes at 180°C (355°F).  5. While chicken is in the air fryer, chop some baby gem lettuce and mix with some of your Caesar dressing. Toast your brioche buns, and cut up some of your pre-cooked bacon so it makes a nice bacon crumb.   6. When chicken is done, start assembling your chicken burger by adding your sauce first, then your chicken, and top with your lettuce mix, bacon crumb and parmesan.   7. Add more sauce on top if you’d like and enjoy 🙂

Easy Irish Soda Bread Farls 🥓🍳   If you’ve ever been to Ireland, you’ve probably had a fry-up, complete with soda bread on the side. Soda bread is typically paired with sausage, bacon, and eggs, but why stop there? Here is a pan and airfryer version, the airfryer does make them a lot bigger.   Ingredients:  * 390g soda bread flour  * ½ pint buttermilk  * 1 tbsp rapeseed or veg oil  * Pinch of salt 

Method:  1. Sieve your soda bread flour into a large mixing bowl  2. Pour half a pint of buttermilk into a jug with 1 tbsp oil, and mix  3. Add this mixture gradually to the flour along with a pinch of salt and mix with a fork. It will slowly come together and form into a dough  4. Knead for 5 mins, Shape your dough on a floured surface into a flat circle and cut into quarters. 5. Once the dough is cut, place the floured soda bread on a frying pan (low to medium heat) for 8 minutes on each side. Be sure to flour the top of the soda bread before flipping. You can also cook these in the air fryer for 10 minutes at 160, flip and cook for another 5 minutes.  6. Once cooked, allow the soda breads to cool and serve. Personally, I love soda bread with bacon, eggs and brown sauce.

Air Fryer Hot Honey Chicken Crunch Wraps 🌯 Wraps are so underrated but this way with hot honey chicken and sticky halloumi really hits. My new cookbook Healthy Fakeaways is half price on preorder :) Ingredients:  - 2 chicken breasts   - 1 tbsp Cajun   - 60g cornflakes   - 1 egg, beaten   - 1/2 block of halloumi   - Handful of lettuce    - 2 large wraps   - Perinaise or a spicy mayo For the hot honey:  3 tbsp honey   2 tsp franks hot sauce   Method:  1. Crush your cornflakes and add to a plate, add your beaten egg to a small bowl and then dip your chicken breasts into the egg and then into the crushed cornflakes 2. Add the chicken to the air fryer and cook for 17 minutes at 180 or until cooked 3. Prepare your hot honey by mixing together some honey with Frank’s hot sauce   4. Fry off your halloumi on a pan with some honey 5. When your chicken is cooked, drizzle the hot honey over the chicken and cut into pieces   6. Cut your wrap in the centre until the middle then add lettuce to one quarter, your chicken in another, your perinaise in another and then your halloumi pieces in the last quarter 7.
